healthy mini muffins recipe
first of all i’d like to tag maddymakes_ tiktok because she inspired these & also has sooooo many ideas for healthy meals & snacks that littles and adults can enjoy!
i have made blueberry, strawberry & chocolate chip - peanut butter mini muffins & the ingredients are a little different between the fruit and chocolate, so i’ll write them both out for you!
STRAWBERRY & BLUEBERRY
DRY INGREDIENTS: (the chocolate chip dry ingredients are the exact same but i add 1 tbsp cinnamon)
1.5 cups flour(i used wheat, but unbleached all-purpose and almond flour are great options too)
2 tsps baking soda
1 tsp(ish) seeds( i have a mixed seed bag bug flax, chia or hemp are all good on their own as well)
& about a handful of oats
WET INGREDIENTS:
1 mashed ripe banana
1 large egg
1/4 cup greek yogurt
1 cup water
CHOCOLATE CHIP ADDITIONS: 1.5 tsp vanilla extract, 1 spoon full of peanut butter(add more if desired)
INSTRUCTIONS FOR ALL:
preheat oven to 375
mix together the dry ingredients in one bowl and set to the side
mix all wet ingredients together & then add the dry to the wet until fully incorporated
once mixed together, spray a muffin pan & fill to the top - add toppings, finely chopped up(trust me) and then pop them into the oven for 15-20 minutes & enjoy!
