my favorite mediterranean bowl recipe
| i love a good, hearty mediterranean bowl! i had one at panera for the first time a couple years ago, and that was i i was sold for life.
this is yet another recipe that i love because you can essentially change it up however you like & it will taste good.
| INGREDIENTS
◠ quiona
◠ chicken
◠ kale
◠ olives (kalamata or reg olives work)
◠ cucumber
◠ carrots(i wouldn’t necessarilly add these normally, but they were mixed
with pre-cut pepper and cucumber, so i left it & it wasn’t bad!
◠ feta
◠ bell pepper(red, yellow, orange)
◠ tahini sauce
◠ original hummus
◠ half an avocado
◠ a dash of sour cream
◠ a dash of hot sauce

grape tomatoes, pico, black olives, spinach, no meat option, chickpeas, greek yogurt(instead of sour cream)
| PREP
◠ first, you’re going to cut up your chicken however you want. i sliced them into small scale tenders, but if i could go back i’d either thin/cut my breasts in half, or i’d cut into small cubes. i season my chicken very randomly and hardly consistently lol but what i did for this was buttered the pan and allowed it to heat for a minute, then i put the chicken on my pan. i seasoned with lemon juice, garlic salt, onion powder, and a little smoked paprika(you could always use tajin seasoning too). allowed them to cook through on medium heat, and then raised it to high for a few minutes to allow both sides to crisp up a little bit. once chicken is cooked, set aside.
what i did next was all done while the chicken was cooking
◠ i rinsed my quinoa and allowed it to cook on medium-low until it absorbed the water. ratios are on the packaging for quinoa, but it’s a 1 to 2 ratio of quinoa to water typically. once it was cooked i added some lemon juice and garlic salt to add a little flavor because i don’t like bland quinoa.
◠ next i prepared my produce by WASHING everything, and then cutting them up. size is your preference on this one - however i went for smaller scale and it worked out nicely. i rinsed the kale, and massaged lemon juice and salt to take away a little bit of that bitterness.
| ASSEMBLE
◠ to make the bowl it’s really simple! add quinoa first, chicken, a spoon full of hummus, kale, produce, zig-zag portion of tahini & sour cream on top, sprinkle feta on top, and then hot sauce if you desire on top of that!
